Happy Fourth of July Weekend!

Tomorrow is Independence Day in the United States, and cities and towns across the country are planning fireworks displays. Many of these public events involve music and games and people are encouraged to pack a picnic and enjoy the festivities al fresco. The following recipe is sure to be a hit!
Mediterranean Avocado Salad with Mint Vinaigrette
Salad Ingredients
- 1 medium head romaine lettuce, cut into 3/4 inch slices
- 1 ripe medium avocado, seeded, peeled and sliced
- 1 medium cucumber, peeled and cut into 1/2 inch cubes
- 1 small red onion, diced
- 12 cherry tomatoes, cut in half
Place all ingredients in a large bowl; chill briefly.
Mint Vinaigrette Ingredients
- 3 tablespoons extra virgin olive oil
- 2 tablespoons white wine vinegar
- 1 tablespoon lemon juice
- 1 tablespoon minced parsley
- 1 teaspoon sugar
- 1 tablespoon minced mint leaves
- 1/8 teaspoon salt
In a jar with a tight fitting lid, combine all ingredients. Shake well.
Gently toss salad ingredients with the vinaigrette and serve immediately. Enjoy your weekend, can’t wait to hear some stories come Monday!
