Visting Iceland – Try the Skyr!

I hail from Wisconsin where the cow is king, and cheese is consumed in every conceivable form (Wisconsinites do not mess around when it comes to dairy products). Never more than an arm’s length away, we have more cheese shops than gas stations lining the highway! I’m also a big fan of yogurt. It’s thick, creamy, flavorful and the perfect on-the-go snack.

However, not all yogurts are created equal, and making the right yogurt can be downright daunting! I was feeling overwhelmed until I found the perfect yogurt – skyr. It is a wonderful diary product unique to Iceland. Technically, it’s a strained skim-milk cheese, but it is packaged and marketed as yogurt. Skyr is similar in taste to Greek yogurt, but remarkably thicker with a smooth creamy finish. Packed with live cultures, calcium and a whopping 16 grams of protein, it is pure HEAVEN! Kid you not, no matter how hectic your day has been, sit back, take a bite, and just melt away into the velvety goodness of this great stuff.
